140g butter

80g sugar

220g flour (self-raising if possible)


  1. Melt butter and sugar together in a saucepan
  2. Remove from heat and stir in flour
  3. Grease a Swiss roll tin and flatten mixture evenly with the back of a wooden spoon
  4. Place in oven 170° for about 10 – 15 minutes until a nice golden brown
  5. Remove, prick with fork, trim edges, cut into slices, sprinkle with sugar and allow to cool in tin.
